One Pot Creamy Chicken Asparagus Pasta

Who doesn’t love a one pot meal? Doesn’t get easier than throwing the raw chicken, asparagus and pasta into a pot with some liquid and once it boils, cook for another ten minutes and BAM! Dinner is ready! Great for a quick, healthy midweek meal! So simple and it’s up to you if you want to make it super healthy, or splurge a little! If you want to splurge, read the written recipe 🙂

Feel free to cut the recipe in half if needed. These ingredients would comfortably feed 4-6 people.

2 lbs diced chicken
1 bunch asparagus
1 lb pasta (whole wheat, gluten free, brown rice pasta)
5 cups water (some or all can be substituted with broth)
1 tsp salt
1/2 tsp pepper
3 garlic cloves
1 cup milk or cream (can do 1/2 milk, 1/2 cream, etc)
1/3 cup grated cheese (your choice)
