Quick, Healthy Breakfast (Eggs with Hummus, Spinach & Tomato on Toast)

To celebrate my 100th episode, I am making something I haven’t made yet – breakfast!! This is a quick, delicious and healthy breakfast (or snack). Instead of butter, use homemade hummus on your toast! The eggs with the spinach and tomato, on top of the hummus and toast is soooo delicious. Gotta give this one a try! So simple to make and will be ready in less than 5 minutes!

Ingredients:
slice of toast
1-3 eggs
2 slices tomato
1 cup spinach
dash of salt/pepper
hummus

How to make homemade hummus:
In a small blender, add
1 can chickpeas
1 tbls olive oil
1/2 tsp salt and pepper
2 cloves garlic
1 tbls lemon juice
From there, experiment by adding different flavors such as artichokes, olives, roasted red peppers, various herbs and spices.
