Roasted Tomato & Eggplant with Basil

Delicious, light and SO easy to make! Not to mention, makes a beautiful presentation for a dinner party! Can be made as an appetizer or side dish. These roasted tomato eggplant stacks are not only a great flavor combination, but healthy, too! Gluten free, low carb, paleo friendly and vegan!

Here are the ingredients you’ll need. Use 3 slices of eggplant and 3 of tomato to make each stack.
Eggplant
Tomato
Olive oil
Salt
Pepper
Fresh Basil
Balsamic Vinegar
